Potato and Bacon Tart

 



Ingredients:

  • 1 roll of puff pastry
  • 500g of peeled potatoes
  • 120gr of bacon
  • 100g of aged cheese
  • 30g of medium-aged Pecorino
  • 2 leeks
  • 6 tablespoons milk
  • 20g butter
  • A sprig of rosemary
  • A tablespoon sweet paprika
  • Salt

Preparation:

1. Place the peeled potatoes in a pan of lightly salted cold water and bring to the boil and simmer for 20/25 mins until “al dente”.
2. Let them cool and slice them about half a cm thick.
3. Cut the mature cheese into small pieces and clean and roughly chop the leek.
4. Grate the Pecorino cheese and chop the rosemary.
5. Grease a medium size baking dish and cover with the pastry.
6. Add a layer of potatoes horizontally and season with salt, paprika and rosemary.
7. Add a layer of leeks, the bacon and aged cheese.
8. Then repeat the sequence of the ingredients, ending with potatoes.
9. Pour the milk and sprinkle with grated Pecorino.
10. Bake at 180 ‘for 30 minutes.
