Ingredients:
Boil the barley for about 25 minutes with two large pinches of salt.
Dice the tomatoes, onion, lettuce and cucumber and add to serving bowl. Add the freshly chopped basil, oil, salt and pepper and mix.
Once boiled, drain the barley and pass it under cold running water.
Squeeze 1/2 lemon and add a little olive oil to prevent the barley from sticking.
Add to the serving bowl with the other ingredients. Mix and add more seasoning to taste.
